I love food photography and food blogs, but most times I visit a specific post I’m looking for the recipe and I want to find it fast. But instead I end up scrolling through a 5 paragraph essay with a million ads trying to find the damn thing. So I’m trying something new on my blog – recipe first, photos and blogging after. So without further ado, here is my recipe for Buffalo Cauliflower Bites.

Buffalo Cauliflower Bites

Serves two.

You’ll need:
One 16oz bag frozen cauliflower
1/2 cup flour
1/4-1/2 cup water
1 teaspoon garlic powder
1 + 1/2 teaspoon chili powder
1 teaspoon black pepper
1/2 teaspoon cayenne pepper
1/4 cup hot sauce

Preheat oven to 450F. Line a baking sheet with tinfoil and spray generously with nonstick cooking spray.
Place frozen cauliflower in pot of water, fill pot with water until cauliflower is just covered. Place over high flame until water boils, then remove from heat and drain.
Meanwhile, mix water, flour and spices together. Start with 1/4 cup of water and add more water as needed to make a batter that is thick but spreadable.
Toss cauliflower with batter, and pour onto baking sheet, spreading cauliflower pieces.
Bake for 7 minutes, flip, then bake 7 more minutes. Carefully toss cauliflower in hot sauce, and return to oven for 20 minutes or until outside is crispy.
Serve with ranch or blue cheese dressing.

These vegetarian buffalo bites have become a weekly meal at my house. They are cheap, fast and delicious! Honestly at this point I prefer these over actual buffalo chicken bites or wings; they aren’t greasy or heavy so I don’t end up feeling sick or gross after eating them. I also like the texture of the cauliflower – it is uniformly tender, unlike chicken which can have a weird rubbery feel, gristle or bits of fat. Yuck.

From a food safety stand point, this is a winner – no raw meat to worry about!

And I just can’t get over how cheap and easy it is… around here cauliflower costs about $1.50 a bag, so it’s definitely one of the cheapest meals or appetizers you can make.
